This was one of the best meals we’ve had in a while. I could have done it all on the grill, but since sweet corn is no longer in season, we had to use frozen sweet corn.
It is also a very simple meal. The most difficult part is measuring and mixing the seasoning! To start off, fire up the grill (medium-high).
Tip: whenever grilling seafood, make sure to clean and oil your grill well to prevent sticking!
Seasoning: pinch of salt, 3 crushed garlic cloves, tsp dried oregano, 1/2 tsp red pepper, 3 tsp olive oil, zest of 1 lemon. Mix all these on a plate.
Rub the Tilapia (I used 4 fillets) in the seasoning so both sides get covered. Cut 1 avocado in half – pit and peel it. Place avocado and Tilapia on the grill. The avocado halves need to be turned every minute or so. The Tilapia should take about 3 minutes per side. Dice a tomato and cook the corn. Mix these in a bowl. When the avocados and Tilapia are done, dice the avocado and chunk the Tilapia and add to the tomato and corn. Grill corn tortillas – 1 minute per side. Scoop the fish mixture into the corn tortillas and squeeze a bit of lime juice over it all. For additional garnish, add a bit of cilantro!
This meal is getting added to my ‘Good Eats’ section because it was that good!
