I have made a new dish! Because I am a humble person, I named it Vespasta. It got an A+ from Molly and I would have to agree. Here is what I did – you should give it a try:
3 cups Farfalle (bowtie) pasta
1 1/2 cups green beans
1/2 green & red peppers
10-15 cherry tomatoes
5 strips bacon
1/4 cup Parmesan cheese
Olive oil, salt and favorite Italian seasoning
Heat oven to 400 degrees. While oven is heating, slice tomatoes in half and slice peppers. Arrange peppers and tomatoes on a baking sheet and drizzle with olive oil. Roast veggies for about 25 minutes. While veggies are roasting, cook the pasta according to directions. Slice the bacon into small pieces (no more than 1/4 inch chunks) and fry until crispy. When the pasta is halfway done, add the green beans to the pasta and finish cooking. Once pasta is finished, drain the pasta and green beans. Add 3 tablespoons olive oil to the pot used to cook the pasta. Turn off heat and return the drained pasta and green beans to the pot and stir so the oil coats. Add most of the cheese, salt seasoning. Remove veggies from the oven and add to the pasta mixture. Serve the pasta onto plates and top with bacon bits and rest of cheese.
This is a really good meal and pairs well with home-made garlic bread (you usually “pair” things with wine, but I like to pair carbs with more carbs). If you want to class it up a bit, substitute prosciutto for the bacon. Let me know what you think!



The combination of all those flavors sounds delicious, Pat! Have you ever used brown rice pasta? Being allergic to wheat, we started using it a few years ago… a bit heartier than semolina and very tasty! I like the addition of the green beans…I wonder if you could roast the green beans too?
I haven’t tried the brown rice pasta. We usually use whole wheat pasta (except for this one). As for the green beans, I suppose all you could do would be try! Thanks for the comment.

Your recipe sounds so delish, having made something kind of similar except adding an beaten egg to the hot pasta. You do have to temper with just a tad of the pasta then dump it all in, the richness along with the creaminess is amazing. You might say similar to Carbonara if you have had. Of course anything with meat candy (bacon) is a hit with me. LOL
