One of the best recipes for chicken EVER. Molly found this one and made it one night. It was an immediate favorite. After a few months I looked back to see if I had blogged about it and hadn’t. So…in honor of this meal (and hopefully more to come) I have created a new sidebar area called “Good Eats”. This is a spot where I will list links to the best meals I’ve had. It’s a very select group. Plus, as a bonus to you, any link in this area will contain the recipe so you can make it and give me your thoughts!
Tip: The key to this one is the cheese. Make sure you use REAL Parmesan cheese. Using the fake s
tuff can really ruin it.
Here is Chicken Parmesan (you’ll notice that there are few ingredients, yet it is full of flavor…you can thank the real parmesan for that!):
1 cup dried bread crumbs (I made my own)
1/2 cup plus 3 tablespoons Parmesan cheese (Key ingredient)
1 tablespoon olive oil
1 egg white
4 skinless, boneless chicken breasts
pepper
3/4 cup marinara sauce
1 cup shredded mozzarella cheese
Set one oven rack about 4 inches from the top broiler and the other in the middle. Pre-heat the oven to 450 degrees. Line baking sheet with foil and lightly spray with cooking spray. Combine bread crumbs, 2/3 cup Parmesan cheese and oil. In separate bowl, whisk egg white until frothy (is that a word?). Pound the chicken to about 1/2 inch thickness and season with pepper. Dip chicken in egg white and coat with bread/cheese mixture. Place coated chicken in the baking pan. Bake on the middle rack for 15-17 minutes. Remove chicken from the oven and change oven to broil. Broil chicken on top rack for about 1 minute.
Top chicken breasts with marinara sauce (reserving about 1/4 cup for eating with meal). Top that with mozzarella and remaining Parmesan cheese. Broil on top rack for another 1-2 minute, but keep an eye on it so it doesn’t burn!
